Mycologists explain how to spot Russia's most common false mushrooms, from the deadly death cap to the bitter false porcini and Satan's bolete.

False mushrooms, species that closely resemble popular edible ones, pose the biggest danger to inexperienced foragers, mycologists told Lenta.ru. Most are simply inedible, but some are deadly, including the death cap, which can be mistaken for a common champignon.

"The term 'false mushrooms' is not a scientific one but a folk, everyday term," said Dmitry Tikhomirov, host of the programme Tsarstvo Gribov on the television channel Zhivaya Planeta. He said mycology has no such category, but in everyday use the term covers mushrooms that closely resemble popular edible species while being either poisonous or inedible because of an unpleasant or bitter taste. He called them mushroom doubles and warned that a mistake identifying one "can cost health, and sometimes life."

Ivan Mikhalchik, a candidate of biological sciences and mycopathologist, said around 30 species of doubles of popular edible mushrooms are conditionally identified in Russia. Not all are deadly, he said, and most false mushrooms are simply inedible. But he noted that 80 species of mushrooms growing in Russia can cause poisoning, some of them serious, even in the relatively safe Moscow region during the spring and autumn mushroom season.

Lenta.ru's experts named five of the most common false mushrooms found in central Russia: the death cap, the false porcini, the false chanterelle, the sulphur tuft false honey fungus, and Satan's bolete.

Death Cap, the Deadliest Lookalike

The death cap, Amanita phalloides, also known as the pale toadstool, resembles the champignon and the green and grey-green russula. Its cap measures 5 to 12 centimetres, egg-shaped when young and flatter with age, ranging from whitish and pale yellow to grey or olive. The gills beneath are always pure white. The stem grows 7 to 20 centimetres long, is white or greenish, and has a membranous ring near the top and a deep sac-like remnant, called a volva, at the base. The flesh is white and does not change colour when cut, and the smell is neutral or faintly sweet. It grows in light deciduous and mixed forests, favouring oak, linden and birch.

Champignons can be told apart because their gills start pink before darkening and they have no volva at all, along with a strong, pleasant smell; russulas lack both a volva and a ring on the stem.

Mikhalchik said the lethal dose of death cap is just a quarter of a cap. Symptoms appear only 6 to 12 hours later, once toxins have entered the bloodstream and begun destroying organs. The first one to two days bring severe vomiting, diarrhoea, painful cramps and convulsions, he said. On the third day comes a false sense of relief, as symptoms seem to ease while the liver is actually failing. From the fourth to eighth day, he said, skin and eyes turn yellow, urination stops, and internal bleeding begins; without an urgent liver transplant, the result is coma and death.

A Recently Discovered Antidote

Mikhalchik said an antidote to death cap poisoning, once considered fatal in more than 90 percent of cases, was discovered in 2023 by a team of Chinese and Australian mycologists. He said the mushroom's pleasant, nutty taste means victims often do not notice they have eaten it, and its toxin, alpha-amanitin, previously had no antidote because the exact mechanism of human poisoning was unclear. The researchers found that alpha-amanitin enters human cells through a transporter protein called OATP1B3, and that this protein can be blocked by indocyanine green, a dye widely used in medicine, and by posaconazole, an antifungal drug. Mikhalchik said both substances have successfully prevented deaths from the toxin.

False Porcini, the Bitter Twin

The false porcini, Tylopilus felleus, also called the bile mushroom or bitter mushroom, resembles the true porcini and other Boletus species. Its velvety cap spans 4 to 15 centimetres, ranging from light to dark brown. Beneath it, the pore surface is dirty pink or cream, turning a richer pink with age or when pressed. The club-shaped stem carries a dark brown netted pattern, the white flesh takes on a faint pink tinge when cut, and the smell is weak, sometimes earthy, with no mushroom aroma. It grows in coniferous and mixed forests on acidic, damp or sandy soil, often near pine and spruce.

Alexander Rybyantsev, a gardener registered with the service Profi.ru, said the pore surface of a young true porcini is white or cream, turning yellowish or greenish only with age, and its flesh stays white after cutting, with a thin white netting on the stem. The false porcini is not poisonous, but it is inedible because of an intense bitterness that survives cooking and only intensifies, capable of ruining an entire dish if even one mushroom slips in.

False Chanterelle

The false chanterelle, Hygrophoropsis aurantiaca, also called the orange funnel cap, resembles both chanterelles and saffron milk caps. Its velvety cap, 1.5 to 6 centimetres across, is always a regular circle, bright orange or brick-red, becoming funnel-shaped with age. Thin, bright orange-yellow gills run down the short stem, which is darker, almost black, at the base.

Real chanterelles have a less vivid, egg-yolk coloured cap with wavy, asymmetrical edges and a fruity mushroom smell, with the stem forming one piece with the cap; saffron milk caps always release bright orange or milky juice when cut and show clear rings on the cap. Tikhomirov said foragers need not fear the false chanterelle much, since it is not poisonous, only unpleasant, tough, and capable of causing mild stomach upset in some people.

Sulphur Tuft False Honey Fungus

Hypholoma fasciculare, the sulphur tuft, resembles summer and autumn honey fungus. Its bell-shaped, later flattened cap is sulphur yellow, lighter at the edge and darker or brick-red at the centre. The thin, crowded gills start grey-yellow and turn greenish, the stem is hollow and light yellow, the flesh is very bitter, and the smell is unpleasantly musty. It grows in large clusters on fallen trees and at the base of living ones in all forest types.

Summer honey fungus has a thin, almost black, tough stem and a brown cap with a yellow ring, while true autumn honey fungus has a light, skirt-like ring and small scales on a pinkish-beige cap. Tikhomirov said false honey fungus is not the most poisonous species but most often deceives foragers, particularly at the boundary between the summer and autumn seasons, since it closely imitates its edible relatives. He warned that its toxins survive even canning, making it "a potential time bomb on any festive table," and said even experienced foragers can be fooled, so picking honey fungus demands extreme care.

Satan's Bolete

Satan's bolete, Rubroboletus satanas, resembles the noble porcini. Its velvety, dry cap grows 7 to 30 centimetres wide and is greyish with an olive or dirty green tinge. The pore layer is yellowish when young, turning orange or brick-red with age, and bruises blue or green when pressed. The short, fleshy stem is yellowish-red at the top and ochre or brownish with a brick-red netting lower down. The flesh is dense, whitish or yellowish, faintly bruising blue or red, with a mild nutty taste and no bitterness; young specimens smell spicy and pleasant, older ones like rotten onion or meat. It favours light, sunny broadleaf forests near oak, linden and hazel.

The noble porcini, by contrast, has dense white flesh that never changes colour, a pore surface that barely darkens when pressed, and a light beige or brown stem with white or grey netting, along with a strong, pleasant mushroom aroma. Mikhalchik said the raw Satan's bolete is poisonous, and that poisoning was once blamed on the toxin muscarine, also found in fly agarics, though neither mushroom contains enough of it to cause serious harm. He said the likelier culprit is a toxic protein called bolesatin, which halts protein and DNA production and sharply raises blood clotting, risking widespread thrombosis. Because the toxin breaks down with cooking, he said, some European countries treat the mushroom as conditionally edible, though he would still not recommend eating it.

How to Tell Real Mushrooms From False Ones

Rybyantsev said there is no single reliable sign of a false mushroom, and pickers should never assume safety just because a mushroom smells pleasant, tastes free of bitterness, or shows no insect damage. He added that the belief that long boiling makes any mushroom safe is also false, since some toxins survive heat treatment. In the forest, he said, foragers should judge each species by its specific features and avoid anything unfamiliar or doubtful.

Tikhomirov advised beginners to start with tube mushrooms, or boletes, since central Russia has no deadly poisonous species among them, including porcini, aspen boletes, birch boletes, butter boletes and moss mushrooms. He said inedible doubles such as the bile mushroom or pepper mushroom exist among them, but at worst they only spoil a dish with bitterness, whereas gilled mushrooms include genuinely dangerous species.

Lenta.ru's experts listed five features that matter most when identifying a mushroom: the colour and pattern of the cap, the colour and type of gills or pores, the shape and markings of the stem, the colour of the flesh when cut, and the smell. If even one feature fails to match the description of the edible species, the mushroom should be left alone.

Tikhomirov said foragers should always twist or dig a mushroom out with its base rather than cutting it, since a volva, the membranous ring at the very base, is a red flag for fly agarics and death caps. He said many poisonous or inedible mushrooms have an unpleasant smell, and urged foragers never to trust folk beliefs such as "a wormy mushroom is edible" or "blackened onion in the broth means poisonous mushrooms." He called these myths, noting that the death cap does not smell unpleasant and that slugs happily eat it. "Trust only precise botanical features," he said.
