A few years ago I decided not to eat meat anymore.

Problem: I LOVE meat. Above all, I love foie gras. Every Christmas my grandmother prepares two huge homemade terrines and I ate them every day, 3 times a day, until the 31st.

Captured by the horrific images of farms my beliefs, I started looking for a replacement by becoming a vegetarian.

My secret vegan foie gras recipe

I tasted industrial faux foie gras, homemade faux foie gras and ended up developing my own recipe. Visually and tastefully, I’m not afraid to say that the result will please everyone.

So beware, even after tasting this delicacy, some people will still disagree, claiming it doesn’t exactly taste like foie gras.

You can tell them It is NOT foie gras. Real foie gras is made from the diseased organs of abused animals, it’s a very difficult taste to imitate with plants.

In order not to suffer the comparison with this delicious even if cruel dish, you can baptize your “faux-gras” with the name of “terrine” or “pâté”.

Vegan foie gras: the ingredients

This (party) recipe is quite expensive, I’d say between €20 and €30 in all, but it’s worth a try, provided you have a powerful blender, like this one.

No need to try to get the smooth texture you want in the little $15 food processor you use for your smoothies. You need a powerful machine to mix all this at high speed!

You will normally find all of these ingredients in health food stores.

  • 150 g natural chestnut puree (unsweetened)
  • 150 g cashews (unroasted, unsalted)
  • 150 g of coconut oil deodorized
  • 100 g of shallots
  • 3 cloves of garlic
  • 4 tablespoons malt yeast (often loose in the organic store)
  • 3 tablespoons of miso White
  • 2 tablespoons walnut (or olive) oil.
  • 2 tablespoons Armagnac (or Cognac or dry white wine)
  • 2 teaspoons of salt
  • 1 teaspoon of pepper
  • 1 teaspoon ground coriander
  • 1 clove (optional)
  • 1 good pinch of nutmeg (optional)

I know this long list is a little scary but once you have purchased and measured the ingredients, the hard part is done!

Vegan foie gras: the recipe

While ingredients aren’t necessarily around the corner, making this vegan foie gras is SIMPLE. Here is the procedure to follow:

  1. Chop the garlic and shallot. Brown in a pan with a little oil. Go further.
  2. Melt the coconut oil over low heat.
  3. To place all ingredients in a blender, except the coconut oil. Blend until smooth.
  4. While the blender is running, gradually add the oil to create an emulsion.
  5. When everything is homogeneous, pour into a saucepan or bowl.
  6. For the visual aspect you can melt the coconut oil with a pinch of turmeric and cover the bowl with this mixture then put it in the fridge.

It takes at least an hour for the bowl to “set”: as it cools, the coconut oil will solidify.
