To prepare the batter for pancakes there are often different schools: those who add orange blossoms; who prefers a spoonful of rum. Others even add beer (after all, why not?).
            
            
        
Since I don’t like making anything like everyone else, I don’t put any of these ingredients in the pancake mix. Which doesn’t stop it from being delicious and delighting adults and children alike at Candlemas. Since I’m feeling in a generous mood, I share it with you.
Ingredients for the crepe batter (for 12-14 crepes)
- 300 g of T65 flour
 - 4 eggs
 - 60 ml of milk
 - 40 g of icing sugar
 - 1 sachet of vanilla sugar
 - 1 pinch of fine salt
 - A little sunflower oil
 
Pancake batter recipe
- Start by mixing all the dry ingredients in a salad bowl: the flour (preferably sifted), the icing sugar, the vanilla sugar and the pinch of salt.
 - Dig a hole in the center of the mixture to crack the eggs.
 - Add the milk little by little and mix with a whisk until you obtain a homogeneous and smooth mixture.
 - Leave to rest for 1 hour in the refrigerator.
 - Using a sheet of paper towel soaked in sunflower seed oil, brush the bottom of your crêpes pan heated over a high heat.
 - When the pan is hot, add a ladle of pancake batter and cook for about 1 and a half minutes on each side. Stack the pancakes on top of each other to keep them warm until the batter runs out.
 - Garnish them with whatever you want (spread cream, sugar, salted butter caramel, jam, etc.) and enjoy!
