A culinary specialty originating in Vietnam and China, spring rolls are made with fresh, crunchy vegetables, rice vermicelli and, traditionally, shrimp or meat cut into strips.
Here we offer a vegetarian version, perfect for an appetizer or a light dinner. Delicious with a classic nems sauce, you can also, if you have a sweet tooth (like us, what), try these homemade spring rolls with a peanut sauce, the recipe of which is also shown below.

Ingredients for 8 spring rolls
- 8 rice cakes
- 100 g of soy vermicelli
- 200 g of chopped lettuce
- 80 g of chopped red cabbage
- 200 g of carrots cut into sticks
- 8 fresh mint leaves (or coriander)
The ingredients for the peanut sauce
- 40 g of salted soy sauce
- 30 g of peanut paste
- ½ lime
- 1 minced garlic clove
Spring rolls recipe
- Start by cooking the soy vermicelli in a pot of boiling water, following the instructions on the package. Once cooked, pass them under cold water and keep them aside.
- While the vermicelli is cooking, chop the red cabbage, lettuce and carrots and remove the mint. Book.
- Then prepare a bowl of warm water and a damp cloth that will serve as a work surface for spreading the rice cakes.
- Dip the rice cakes one after the other in warm water for about 10 seconds, then drain them on a kitchen towel.
- Garnish the round part of the rice cakes with a little soy vermicelli, grated kohlrabi, lettuce and mint. Fold the side edges of the galette over the filling, then roll up, squeezing gently.

Peanut sauce recipe
In a small bowl, combine the soy sauce, peanut paste, lime juice and minced garlic. Mix well with a whisk to obtain a homogeneous sauce.
Leave the spring rolls to rest in the fridge for a quarter of an hour before enjoying them. Enjoy your meal !
