Galette des rois: the traditional recipe of frangipani and its variations for all tastes

The galette des rois is officially January 6, but we can very well (re)celebrate it on the first Sunday of the year. An opportunity to revisit the traditional recipe and its lighter, fruity or vegan variations!

Good, The cake of kingsYou usually love her or leave her. Not everyone is a fan of puff pastry or frangipane, but it’s still an essential dessert that should remind you of many childhood snacks. If, like me, you never had la fève as a kid, today you can take your revenge: cook yourself a galette all for yourself, for Epiphany day on January 6, 2023, or the first Sunday of the year, or whenever you want , in real life!

The recipe for the real and traditional galette des rois

Pastry chef Christelle Huet-Gomez, who runs the Once Upon a Time in Pastry blog and YouTube channel of the same name, shared the traditional recipe on video:

The ingredients of the galette des rois frangipane

– 2 puff pastry

– Custard :

  • 15 cl of whole milk
  • 1 vanilla pod (optional)
  • 2 egg yolks
  • 25 g of granulated sugar
  • 15 g of corn starch
  • 5 g of flour
  • 10 g of butter

– Almonds cream:

  • 2 eggs
  • 125 g of ground almonds
  • 100 g of granulated sugar
  • 100 g of softened butter
  • 1 cork of rum

– Final syrup

  • 1 egg yolk
  • 4 cl of water
  • 40 g of granulated sugar

Variants of the galette des rois for the Epiphany

Because the galette accepts almost all possible variations!

  • Youtuber La Petite Okara offers a delicious vegan version:
  • Chocolate/orange version : a bit like Pim’s, chocolate and orange go very well together.
  • Apple version : there are a lot of apple galettes des rois on the shelves now (it’s a bit of a sacrilege in my opinion, but whatever). The Youtuber Hervé Cuisine also offers an apple-almond variant that is very easy to reproduce thanks to his video.
  • Chocolate, coconut and pear version : ok, we’re moving away from the almond, but the association can’t be bad. Of course, without pear, it works too! It’s a bounty cake.
  • Pineapple/coconut version : quite exotic, this version will appeal to lovers of very fruity desserts!
  • Caramelized dried fruit version : a slightly “old-fashioned” version that will go divinely with hot tea!
