To start, preheat the oven to 180ºC without air and prepare a tray lined with non-stick greaseproof paper. Take the egg whites in a deep bowl and add a pinch of salt, pepper, garlic powder, thyme and other spices (if we want).

Beat with a wire mixer until soft peaks form. Then we add the cornstarch (if we want to add it) and beat for a little more (one or two minutes) until it thickens. soft meringue texture.

Pour into the prepared tray and spread it with a spatula or the back of the spoon to give it a round or oval shape and neither too thin nor too thick. However, it will go out when it comes out of the oven.

Cook until golden brown about 12-15 minutesand take it out of the oven. We spread the ingredients of the coating according to taste (tomato sauce, vegetables, cooked ham or diced bacon, mushrooms…) and lots of cheese on the gratin. Bake again for 5-7 minutes until cheese is melted and add some more thyme just before serving.

The easiest is to use pasteurized egg whites from a jar so we don’t have to separate the eggs from the yolks, and this allows us to adjust the recipe to our liking as we get used to it. Directo al Palate experts added a little cornstarch or cornstarch to this version to give it fit and flexibility, but it can also be made without it. Instead we can add a few tablespoons of cream cheese spreadas in the cloud bread recipe.
