The first thing we have to do Wash and dry the eggplants well, bell pepper and fresh herbs. Then we chop the onion and garlic very finely and pound the coriander seeds in a mortar, leaving more whole pieces. We also cut the peppers and eggplants into cubes.

On the other hand, heat two tablespoons of oil in a pan, fry the onion with a pinch of salt for about 5-8 minutes and add the pepper and garlic for another 10 minutes. Then add the tomato paste and mix for a couple of minutes.

Then add the eggplant and mix it on low heat and it starts to turn color. Add crushed tomatoes, concentrated tomatoes and some water or broth. Stir and cook slowly for about 60-70 minutes.

While cooking, you need to add broth as needed, stirring occasionally. The result is a syrupy consistency to which you add a handful of chopped parsley or cilantro and it’s ready to be enjoyed. It can be served with fresh dill if desired.
